Ingredients

1 cup (240ml) warm water

2 tbsp (30ml) olive oil

2 medium potatoes (about 1 lb / 450g), boiled and mashed

1/2 cup (50g) chopped green onions or leeks

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp cumin

1 tbsp (15ml) olive oil

For Frying:

1/4 cup (60ml) vegetable oil

Instructions

Prepare the Dough In a bowl, mix flour and salt. Gradually add warm water and olive oil, kneading until smooth. Cover and let rest for 30 minutes.

Make the Filling Mash the boiled potatoes in a bowl. Stir in green onions, salt, black pepper, cumin, and olive oil.

Assemble the Bolani Divide the dough into small balls and roll them into thin circles. Spread a thin layer of filling over half of each circle, then fold and seal the edges.

Cook Until Golden Heat vegetable oil in a pan over medium heat. Fry each Bolani for 2-3 minutes per side, until crispy and golden brown.
