Ingredients
For the Dough (if making from scratch):
4 cups (500g) all-purpose flour
1 tsp (5g) salt
1 ½ cups (360ml) warm water
3 tbsp (45ml) olive oil
For the Filling (Cheese & Spinach Version):
10 oz (300g) feta cheese, crumbled
1 cup (200g) ricotta cheese
2 cups (100g) fresh spinach, chopped
1 egg
1/2 tsp black pepper
Additional:
12 sheets phyllo dough (if not making from scratch)
1/2 cup (120ml) melted butter or olive oil for brushing
Instructions
Prepare the Dough (If Homemade) Mix flour, salt, and warm water in a bowl until a dough forms. Knead for 10 minutes, cover, and let rest for 30 minutes. Roll out into thin sheets for layering.
Prepare the Filling In a bowl, mix feta cheese, ricotta, spinach, egg, and black pepper.
Assemble the Byrek Preheat oven to 375°F (190°C). Grease a baking dish and place a phyllo sheet, brushing with butter or oil. Repeat layering 6 sheets, then spread the cheese filling evenly. Cover with the remaining phyllo sheets, brushing each with butter. Cut into squares or triangles before baking.
Bake the Byrek Bake for 35-40 minutes until golden brown and crispy. Let cool slightly before serving.
Serving Byrek is best served warm, with yogurt, pickles, or a fresh salad. It can be enjoyed for breakfast, lunch, or as a snack.
