Carbonade Flamande is a classic Belgian beef stew slow-cooked in a rich beer-based sauce. Ingredients:

2.2 lbs (1 kg) beef chuck, cut into cubes

2 tablespoons (28 g) butter

2 large onions, sliced

2 tablespoons (25 g) brown sugar

2 tablespoons (30 ml) Dijon mustard

2 tablespoons (30 ml) apple cider vinegar

1 tablespoon (15 g) flour

2 cups (500 ml) Belgian beer (preferably a dark ale)

1 cup (240 ml) beef broth

2 bay leaves

1 teaspoon dried thyme

Salt and black pepper to taste

Instructions:

Step 1: Brown the Beef Heat butter in a large pot over medium-high heat. Season the beef with salt and black pepper, then sear in batches until browned on all sides. Remove and set aside.

Step 2: Cook the Onions In the same pot, add the sliced onions and cook until soft and caramelized. Stir in brown sugar and cook for another minute.

Step 3: Build the Sauce Sprinkle flour over the onions and stir well. Deglaze the pot with apple cider vinegar. Add Dijon mustard, beer, and beef broth, stirring to combine.

Step 4: Simmer the Stew Return the beef to the pot and add bay leaves and thyme. Cover and simmer on low heat for 2–3 hours until the beef is tender. Adjust seasoning with salt and black pepper.
