1.5 lb (700 g) pork bones
10 cups (2.5 L) water
1 onion, quartered
2 cloves garlic, smashed
1 tbsp (15 g) salt
1 tbsp (15 g) sugar
1 tbsp (15 ml) fish sauce

1 lb (450 g) fresh rice noodles
1/2 lb (225 g) ground pork
1/2 lb (225 g) shrimp, peeled and deveined
1/2 lb (225 g) bean sprouts
1/2 cup (50 g) chopped scallions
1/4 cup (25 g) fried garlic
Toppings (Optional):
Lime wedges
Chili slices
Fresh herbs (cilantro, Thai basil)
Hoisin sauce
Instructions:
Prepare the Broth: In a large pot, bring water to a boil and add pork bones. Blanch for 5 minutes, then drain and rinse the bones. Return the bones to the pot, add 10 cups of water, onion, garlic, salt, sugar, and fish sauce. Simmer for 1-2 hours, skimming off any foam. Strain the broth and keep it warm.
Cook the Noodles: Cook the rice noodles according to package instructions. Rinse with cold water to stop cooking and set aside.
