Lakror is a traditional Albanian savory pie, similar to burek but made with thin homemade dough and filled with spinach, cheese, or meat. This beloved dish is crispy on the outside and flavorful on the inside, making it a perfect meal for any time of day.

Ingredients

Dough:

4 cups (500g) all-purpose flour

1 tsp salt

1 cup (240ml) warm water

2 tbsp (30ml) olive oil

Filling (Spinach & Cheese Version):

1 lb (450g) fresh spinach, chopped

1 cup (200g) feta cheese, crumbled

1 small onion, finely chopped

2 tbsp (30ml) olive oil

1/2 tsp salt

1/2 tsp black pepper

1 egg (optional, for binding)

Instructions

Prepare the Dough In a large bowl, mix flour and salt. Gradually add warm water and olive oil, kneading until a smooth dough forms. Cover and let it rest for 30 minutes.

Make the Filling Heat olive oil in a pan and sauté onions until soft. Add spinach, salt, and pepper, and cook for 2-3 minutes. Remove from heat and mix in feta cheese (and egg, if using).

Assemble the Lakror Divide the dough into two equal parts and roll them into thin sheets. Place one sheet in a greased baking pan, spreading the filling evenly. Cover with the second dough sheet and seal the edges.

Bake to Perfection Preheat oven to 375°F (190°C). Brush the top with olive oil and bake for 30-35 minutes until golden brown.

Serving Lakror is best served warm, cut into slices, and paired with yogurt or fresh salad. It’s a delicious and hearty dish for family meals or special occasions.
