Ingredients You'll Need:

200g (7 oz) Rice vermicelli or egg noodles

400ml (13.5 oz) Coconut milk

500ml (16.9 oz) Chicken or vegetable broth

250g (8.8 oz) Cooked chicken, prawns, or tofu

1 Stalk lemongrass, bruised

2-3 Kaffir lime leaves

1-2 Red chilies, sliced (adjust to your spice preference)

1 Small onion, finely chopped

2 Cloves garlic, minced

1 tsp Ground turmeric

1 tsp Ground coriander

1 tbsp Cooking oil

Salt and sugar to taste

Fresh cilantro leaves, bean sprouts, and lime wedges for garnish

Instructions:

Preparing Laksa:

Cook the rice vermicelli or egg noodles according to the package instructions. Drain and set aside.

In a large pot, heat the cooking oil over medium heat. Add the finely chopped onion and minced garlic. Sauté until fragrant and the onion becomes translucent.

Stir in the ground turmeric and ground coriander, and cook for another minute to release their flavors.

Add the chicken or vegetable broth, lemongrass stalk, kaffir lime leaves, and sliced red chilies to the pot. Bring the mixture to a simmer and let it cook for about 10-15 minutes.

Pour in the coconut milk and let it simmer for an additional 5 minutes. Season with salt and sugar to taste.
