1/2 tsp thyme
1/4 tsp black pepper
1/4 tsp hot pepper flakes (optional)
1/2 cup (120ml) water
For the Fungi:
1 cup (160g) cornmeal
2 cups (480ml) water
1 tbsp (15g) butter
1/2 tsp salt
1/2 cup (75g) okra, sliced
Instructions
Preparing the Saltfish:
Desalt the Fish Rinse the saltfish under cold water, then soak it in fresh water for 2-3 hours or boil for 10 minutes. Drain and flake into small pieces.
Sauté the Vegetables Heat oil in a pan over medium heat. Add onions, garlic, bell pepper, and tomatoes, cooking until softened.
Cook the Saltfish Stir in the tomato paste, thyme, black pepper, and hot pepper flakes. Add the flaked saltfish and water, simmering for 10 minutes.
Preparing the Fungi:
Cook the Okra In a saucepan, bring water and salt to a boil. Add the okra and cook for 5 minutes.
Incorporate the Cornmeal Gradually add cornmeal while stirring constantly to avoid lumps. Reduce heat and continue stirring until thick and smooth, about 10 minutes.
Finish with Butter Stir in butter and mix well. Remove from heat and let it set.
