Strukli is a beloved traditional dish from Croatia, especially popular in the northern regions like Zagorje. This comforting pastry is filled with a rich mixture of cottage cheese and sour cream, offering a savory, melt-in-your-mouth experience. Ingredients
2.2 lb (1 kg) all-purpose flour
1 tsp (5 g) salt
1 egg
1 tbsp (15 ml) vegetable oil
1 cup (240 ml) warm water
2 lb (900 g) cottage cheese or ricotta
1 cup (240 ml) sour cream
1 egg yolk
0.5 lb (225 g) butter, melted
Pinch of salt
Instructions
Prepare the Dough: In a large bowl, combine the flour and salt. Make a well in the center, add the egg, vegetable oil, and warm water. Mix until a dough forms, then knead for about 10 minutes until smooth and elastic. Cover the dough and let it rest for 30 minutes.
Prepare the Filling: In a medium bowl, combine the cottage cheese, sour cream, egg yolk, and a pinch of salt. Mix well until smooth.
Roll the Dough: Roll out the rested dough on a floured surface as thin as possible, aiming for a large rectangle. Stretch the dough gently with your hands if needed.
Assemble the Strukli: Spread the cheese mixture evenly over the dough, leaving a small border around the edges. Roll the dough up tightly from one end to the other like a jelly roll.
Cut and Arrange: Slice the rolled dough into pieces about 4-5 inches long. Arrange the pieces in a buttered baking dish, seam-side down. Pour the melted butter generously over the Strukli.
Bake: Preheat the oven to 375°F (190°C). Bake the Strukli for 30-40 minutes until golden brown and crisp on top.
Optional Boiling Method: If you prefer boiled Strukli, cut the dough into smaller pieces and boil them in salted water for 10-15 minutes before adding sour cream and baking for an additional 10 minutes.
