Ingredients

For the Tajine:

2 lbs (900g) lamb or chicken, cut into chunks

2 tbsp (30ml) olive oil

1 large onion, sliced

3 garlic cloves, minced

2 carrots, sliced

1 zucchini, sliced

1/2 cup (75g) dried apricots or prunes

1/4 cup (40g) almonds (optional)

1/2 cup (120ml) chicken or vegetable broth

Spices:

1 tsp ground cumin

1 tsp ground coriander

1 tsp paprika

1/2 tsp ground cinnamon

1/2 tsp turmeric

1/2 tsp salt

1/4 tsp black pepper

Instructions

Prepare the Base In a tajine pot or heavy-bottomed pan, heat olive oil over medium heat. Add onions and garlic, cooking until fragrant.

Brown the Meat Add lamb or chicken and cook until browned on all sides.

Add Spices & Vegetables Sprinkle in the spices, stirring well. Add carrots, zucchini, dried fruit, and almonds.

Simmer Slowly Pour in the broth, cover with a lid, and cook on low heat for 1.5 to 2 hours, stirring occasionally, until the meat is tender and the flavors are well blended.

Serve Let the tajine rest for a few minutes before serving.

Serving Tajine is traditionally served with couscous, flatbread, or rice. Garnish with fresh cilantro and a sprinkle of toasted almonds for an authentic Moroccan touch.
