Ingredients:

1 lb (450 g) white fish fillet (e.g., catfish, tilapia, or snapper)

1 cup (250 ml) coconut milk

1 tbsp (15 g) fish sauce

1 tsp (5 g) palm sugar (or brown sugar)

2 tbsp (30 g) Amok paste (or curry paste)

1 lemongrass stalk, finely chopped

2 kaffir lime leaves, minced

1-inch (2.5 cm) galangal, grated

1 clove garlic, minced

1 small chili (optional), chopped

1 tsp turmeric powder

1 egg, beaten

4 banana leaves (or ramekins for steaming)

Salt and pepper to taste

Optional: 1/4 cup (25 g) julienned kaffir lime leaves for garnish

Instructions:

Prepare the Fish: Cut the fish fillet into bite-sized pieces and set aside.

Make the Amok Paste: In a mortar and pestle or food processor, combine lemongrass, kaffir lime leaves, galangal, garlic, chili, and turmeric until smooth.

Mix the Curry: In a bowl, whisk together the coconut milk, Amok paste, fish sauce, palm sugar, and beaten egg. Adjust seasoning with salt and pepper.

Combine Fish and Curry: Gently fold the fish pieces into the curry mixture, ensuring they’re well coated.

Prepare Banana Leaves: Shape the banana leaves into small bowls or use ramekins. Divide the fish mixture among them.

Steam the Amok: Place the filled banana leaves or ramekins in a steamer. Steam over medium heat for 25-30 minutes, until the mixture is firm and cooked through.

Garnish and Serve: Remove from the steamer, garnish with julienned kaffir lime leaves, and serve hot.

Serving: Amok is traditionally enjoyed with steamed jasmine rice, allowing the fragrant curry sauce to shine. Serve it alongside a light salad or pickled vegetables for a complete Cambodian-inspired meal.
