Ashak is a beloved Afghan dumpling dish, filled with chopped leeks or scallions, steamed to perfection, and topped with a savory tomato sauce and garlicky yogurt. Ingredients
For the Dough:
2 cups (250g) all-purpose flour
1/2 cup (120ml) water
1/2 tsp salt
For the Filling:
2 cups (200g) chopped leeks or scallions
1/2 tsp salt
1/2 tsp black pepper
For the Meat Sauce:
1 lb (450g) ground beef or lamb
1 medium onion, chopped
2 tbsp (30ml) vegetable oil
1 tsp salt
1 tsp black pepper
1/2 tsp cumin
1/2 tsp coriander
1 cup (240ml) tomato sauce
1/2 cup (120ml) water
For the Yogurt Sauce:
1 cup (240ml) plain yogurt
1 clove garlic, minced
1/2 tsp salt
Garnish:
1 tbsp dried mint
1 tbsp chopped cilantro
Instructions
Prepare the Dough In a bowl, mix flour, water, and salt until a dough forms. Knead for 5 minutes until smooth, cover, and rest for 30 minutes.
Prepare the Filling Mix chopped leeks with salt and black pepper. Set aside for 15 minutes to release excess moisture, then drain.
Prepare the Meat Sauce Heat oil in a pan, sauté onions until soft. Add ground meat, salt, pepper, cumin, and coriander, cook until browned. Pour in tomato sauce and water, simmer for 15 minutes.
Make the Dumplings Roll out the dough thinly and cut into small circles. Place 1 tsp of leek filling in each circle, fold into a half-moon, and seal the edges. Steam for 10–12 minutes until soft.
Prepare the Yogurt Sauce Mix yogurt, garlic, and salt in a bowl.
Assemble the Dish Arrange steamed dumplings on a plate. Top with yogurt sauce, then meat sauce. Garnish with dried mint and cilantro.
