Ingredients:

For the Filling:

1 lb (450 g) ground beef

1 small onion, finely chopped

2 tbsp olive oil

1 cup (240 ml) beef broth

2 tbsp Worcestershire sauce

1 tbsp tomato paste

1 tbsp cornstarch mixed with 2 tbsp water

Salt and pepper to taste

For the Pastry:

2 sheets (9 oz / 250 g) frozen puff pastry, thawed

2 sheets (9 oz / 250 g) shortcrust pastry

1 egg, beaten (for egg wash)

Instructions:

Prepare the Filling: Heat olive oil in a pan over medium heat. Add chopped onion and sauté until softened. Add ground beef and cook until browned. Stir in Worcestershire sauce, tomato paste, salt, and pepper. Pour in beef broth and bring to a simmer. Mix cornstarch with water and add to the pan, stirring until the mixture thickens. Remove from heat and let the filling cool.

Assemble the Pies: Preheat oven to 400°F (200°C). Roll out shortcrust pastry and cut circles to fit into a greased muffin tin. Spoon the beef filling into each pastry case. Cut circles of puff pastry for the pie tops and place them over the filling. Press the edges to seal and brush with beaten egg.

Bake the Pies: Place the pies in the oven and bake for 25–30 minutes, or until golden brown. Let them cool slightly before serving.

Serving: Australian meat pies are best served warm with tomato sauce (ketchup) on top. Pair them with a side salad or mashed potatoes for a complete meal.
