Ingredients

For the Basic Version (Vegetarian):

1 lb (450g) bell peppers (red and green), chopped

2 tbsp (30ml) olive oil

1/2 lb (200g) feta cheese, crumbled

1/2 lb (200g) ricotta cheese

3 medium tomatoes, diced

1 small onion, finely chopped

1 tbsp (15g) butter

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

Optional for Meat Version:

1/2 lb (200g) veal or beef, diced

Instructions

Sauté the Vegetables Heat olive oil in a pan over medium heat. Add chopped onion and bell peppers, cooking until softened (about 5 minutes). Stir in diced tomatoes, season with salt, pepper, and paprika, and cook for another 5 minutes.

Add the Cheese Lower the heat and mix in feta and ricotta cheese, stirring until the cheese melts into a creamy consistency.

For the Meat Version (Optional) In a separate pan, brown the diced veal or beef in butter until fully cooked. Add the cooked meat to the vegetable and cheese mixture.

Bake the Fërgesë Preheat the oven to 375°F (190°C). Transfer the mixture to a baking dish and bake for 10-15 minutes, until golden and bubbly.

Serving Fërgesë is best served hot, with fresh crusty bread or as a side dish to grilled meat. It pairs perfectly with a simple salad.
