1/2 tsp (2.5 g) salt

Optional: 1/2 lb (225 g) smoked fish or dried shrimp for added flavor

Instructions:

Prepare the Cassava Leaves: If using fresh cassava leaves, wash them thoroughly and finely chop. If using frozen, thaw and rinse.

Sauté Aromatics: Heat vegetable oil in a large pot over medium heat. Add onions and garlic, cooking until fragrant.

Add Tomatoes and Cassava Leaves: Stir in the diced tomatoes and cook until softened. Add the cassava leaves and mix well.

Cook the Mixture: Pour in the water and bring to a boil. Reduce the heat to low and simmer for 30-40 minutes, stirring occasionally.

Incorporate Peanut Butter: Stir in the peanut butter until fully combined. If using smoked fish or shrimp, add them at this stage. Cook for an additional 10-15 minutes, allowing the flavors to meld.

Season and Finish: Add salt to taste. Adjust the consistency by adding more water if needed.
