Kabuli Pulao is Afghanistan’s national dish, a fragrant and flavorful rice dish cooked with tender lamb, sweet carrots, plump raisins, and aromatic spices. Ingredients
For the Rice:
2 cups (400g) basmati rice
4 cups (1L) water
1 tsp salt
2 tbsp (30ml) vegetable oil
For the Meat:
1.5 lb (700g) lamb or beef, cut into chunks
1 medium onion, chopped
2 tbsp (30ml) vegetable oil
2 tsp salt
1 tsp black pepper
1 tsp cumin
1 tsp cardamom
1/2 tsp cinnamon
3 cups (750ml) water
For the Toppings:
1 large carrot, julienned
1/2 cup (75g) raisins
1/4 cup (30g) slivered almonds (optional)
2 tbsp (30ml) vegetable oil
1 tsp sugar
Instructions
Prepare the Rice Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes, then drain.
Cook the Meat Heat vegetable oil in a large pot, add onions, and sauté until golden. Add meat, salt, black pepper, cumin, cardamom, and cinnamon. Brown the meat on all sides. Pour in water, cover, and simmer for 1.5 hours until tender. Remove the meat and strain the broth, reserving the liquid.
Prepare the Toppings In a pan, heat oil and sauté carrots with sugar until soft. Add raisins and almonds, stir for 2 minutes, then set aside.
Cook the Rice In the same pot used for the meat, add strained broth and bring to a boil. Add soaked rice, reduce heat, and cook until the liquid is absorbed. Place the cooked meat on top, cover, and steam on low heat for 20 minutes.
Assemble the Dish Fluff the rice with a fork and arrange on a serving platter. Top with carrots, raisins, and almonds.
Serving Kabuli Pulao is best served hot, accompanied by yogurt, fresh salad, or naan for a complete and satisfying meal.
