1 lb (450g) beef brisket, cubed
1/2 lb (225g) pork ribs or sausage, sliced
1 cup (200g) dried white corn (hominy), soaked overnight
1/2 lb (225g) pumpkin, diced
2 medium potatoes, diced
1 large onion, chopped
2 cloves garlic, minced
1 tsp paprika
1/2 tsp cumin
1/2 tsp chili flakes (optional)
6 cups (1.5L) beef broth
2 tbsp (30ml) vegetable oil
Salt and black pepper, to taste
Instructions
Sauté the Aromatics Heat oil in a large pot. Add chopped onion and garlic, cooking until soft.
Brown the Meat Add beef and pork, browning on all sides for rich flavor.
Add the Corn and Vegetables Stir in the soaked corn, pumpkin, and potatoes. Pour in the beef broth and season with paprika, cumin, chili flakes, salt, and pepper.
Simmer to Perfection Cover and cook on low heat for 2-3 hours, stirring occasionally until the meat is tender and the stew thickens.
Final Touches Adjust seasoning and serve hot.
