Ingredients

1 large onion, sliced

2 tomatoes, chopped

1 bell pepper, diced

3 cloves garlic, minced

1 tbsp (15ml) vinegar

1 tsp (5g) salt

1/2 tsp black pepper

1/2 tsp paprika

1/4 tsp cayenne pepper (optional for spice)

2 tbsp fresh parsley or cilantro, chopped (for garnish)

Instructions

Prepare the Cassava In a large pot, bring salted water to a boil. Add the cassava chunks and cook until soft and tender, about 20-30 minutes. Drain and set aside.

Grill the Fish Season the fish with salt, pepper, and paprika. Grill the fish over medium heat for about 5-7 minutes per side, until fully cooked and flaky.

Prepare the Sauce While the fish is grilling, heat palm oil in a separate pan over medium heat. Sauté the onions, garlic, and bell pepper for about 5 minutes until softened. Add the chopped tomatoes and vinegar, cooking until the tomatoes break down and form a thick sauce, about 10 minutes.

Assemble the Mufete On a large platter, arrange the cooked cassava chunks and place the grilled fish on top. Pour the prepared sauce over the fish and cassava.
