Mulgipuder, a classic Estonian dish, combines hearty potatoes and barley porridge to create a comforting and delicious meal. Traditionally served with crispy bacon and onions, Mulgipuder is perfect for a cozy family dinner or a special occasion. This recipe brings the authentic taste of Estonia right to your kitchen.

Ingredients:

2 lb (0.9 kg) potatoes, peeled and cubed

1 cup (0.2 kg) pearl barley

4 cups (1 liter) water

1 teaspoon salt

0.5 lb (0.2 kg) bacon, diced

1 large onion (0.2 lb or 0.1 kg), finely chopped

1 cup (0.25 liters) milk

2 tablespoons butter

Fresh dill, chopped (optional, for garnish)

Instructions:

Cook the Barley:

Rinse the pearl barley under cold water. In a large pot, bring the water to a boil, add the barley, and cook for about 30 minutes, or until tender. Drain and set aside.

Cook the Potatoes:

In the same pot, add the cubed potatoes and enough water to cover them. Add a teaspoon of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain and return to the pot.

Combine Potatoes and Barley:

Mash the potatoes in the pot. Add the cooked barley, milk, and butter. Mix well until the consistency is smooth and creamy. Adjust the seasoning with salt if needed.

Prepare the Bacon and Onions:

In a large skillet, cook the diced bacon over medium heat until it becomes crispy. Remove the bacon with a slotted spoon and set aside. In the same skillet, sauté the chopped onion in the bacon fat until golden brown.

Assemble the Mulgipuder:

Fold the crispy bacon and sautéed onions into the potato and barley mixture. Stir until everything is well combined.

Serving:

Serve Mulgipuder hot, garnished with fresh chopped dill if desired. This hearty dish pairs well with pickles or a side of sauerkraut. Enjoy it as a main course or a substantial side dish.

Mulgipuder is a delightful representation of Estonian comfort food, blending simple ingredients into a rich and satisfying dish. Whether you’re celebrating a special occasion or seeking a cozy meal, this recipe brings a taste of Estonia’s culinary tradition to your home.
