Tikvenik is a traditional Bulgarian dessert made with flaky phyllo dough and a sweet pumpkin filling. Often prepared during autumn and winter, this comforting dish is a festive favorite. Ingredients:

Pumpkin Filling:

2 lb (1 kg) grated pumpkin

1 cup (200 g) granulated sugar

1/2 cup (75 g) chopped walnuts

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 cup (60 ml) vegetable oil or melted butter

Phyllo Dough:

12-15 sheets of phyllo pastry

1/2 cup (120 ml) vegetable oil or melted butter (for brushing)

Optional:

Powdered sugar (for dusting)

Instructions:

Prepare the Pumpkin Filling: In a large bowl, combine the grated pumpkin, sugar, chopped walnuts, cinnamon, and nutmeg. Mix well to ensure even distribution of spices and sweetness.

Preheat the Oven: Set your oven to 350°F (175°C) and grease a large baking dish.

Assemble the Tikvenik: Lay a sheet of phyllo dough on a flat surface and lightly brush it with oil or melted butter. Spread a thin layer of the pumpkin filling evenly over the phyllo sheet. Roll the phyllo sheet tightly into a log and place it in the prepared baking dish. Repeat with the remaining sheets and filling, arranging the rolls side by side.

Bake: Brush the top of the assembled rolls with additional oil or melted butter. Bake for 30-35 minutes or until golden brown and crispy.

Cool and Dust: Allow the Tikvenik to cool slightly before dusting with powdered sugar for a festive touch.

Serving: Cut the Tikvenik into slices and serve it warm or at room temperature. It pairs wonderfully with a cup of tea, coffee, or even a glass of warm milk.
